This is the recipe for the pancakes I made for breakfast this morning. I forgot to post it at the bottom of the video post. The pancakes were delicious and healthier than the "out of the box - just add milk" kind.
The recipe comes from the Southern Living Ultimate Quick & Easy Cookbook that I have. It is actually called Pumpkin Pancakes, but I didn't have any canned pumpkin so I just used applesauce instead.
Pumpkin Pancakes
Prep time: 8 minutes
Yields: 12 (4 inch) pancakes
Ingredients:
1 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 tablespoon sugar
1/2 teaspoon ground cinnamon or pumpkin pie spice
2 large eggs, separated
3/4 cup milk
1/2 cup canned pumpkin (or applesauce)
1/4 cup butter or margarine, melted
Directions:
- Combine first 5 ingredients in a large bowl; make a well in center of mixture.
- Combine egg yolks, milk, pumpkin (or applesauce) and butter; add to four mixture, stiffing just until dry ingredients are moistened.
- Beat egg whites at high speed with an electric mixer until stiff peaks form. Gently fold beaten egg whites into pumpkin (applesauce) mixture.
- Pour about 1/4 cup batter for each pancake onto a hot, lightly greased griddle. Cook pancakes until tops are covered with bubbles and edges look cooked; turn and cook other side.
I really wish I had taken a picture because they even looked yummy! Now I'm interested in buying some canned pumpkin and pumpkin pie spice to give the real recipe a shot. I think I'd like them a whole lot. Does anyone else have any really good, healthy breakfast recipes they'd like to share with me. Chase and I are back on our health food kick so we're cutting up as much processed foods as possible. So far I'm loving it. Yes, it takes more time and it cost a bit more but we're cooking with and eating REAL food minus all the chemicals and filler products food companies put in products these days.

This Month's Recipe: Chai Tea Mix
I was so excited to see that the recipe this month was for this Chai Tea Mix. I love Chai Tea Lattes so this is perfect! I'm thinking I might make some for the holidays and give it to some friends and family members. If you decide to try it out I hope you enjoy it very much!
Chai Tea Mix
For optimal enjoyment of this trendy flavor-packed drink, be sure your spices are fresh.
Prep: 14 min
Yield: 5 1/2 cups mix
Ingredients
- 2 1/2 teaspoons ground ginger
- 2 teaspoons ground cinnamon
- 3/4 teaspoon ground cloves
- 3/4 teaspoon ground cardamom (optional)
- 1 teaspoon ground allspice
- 1 teaspoon ground nutmeg
- 1/2 teaspoon freshly ground black pepper
- 1 1/2 cups unsweetened instant tea or decaffeinated instant tea
- 1 1/2 to 2 cups sugar
- 1 cup nonfat dry milk powder
- 1 cup powdered nondairy creamer
- 1 cup French vanilla-flavored powdered nondairy creamer
Combine spices and tea in a food processor or blender. Blend 1 to 2 minutes or until mixture becomes a fine powder. Pour into a large bowl. Add sugar to food processor or blender (without cleaning it), and process until superfine, about 30 seconds. Add sugar to bowl of spices. Stir in milk powder and creamers; blend well. Spoon mix into gift jars, if desired.
To serve, stir 2 heaping Tbsp. Chai Tea Mix into a mug of hot milk or boiling water.
Chocolate Chai Mix: Add 1/2 cup unsweetened cocoa along with dry milk powder to the blend above. Follow serving directions above. (We recommend milk here.)
Chai Shake: Blend 1/4 cup Chai Tea Mix, 1 cup milk, and 3 1/2 cups vanilla ice cream in a blender.
White Chocolate Chai: Add 1/4 cup finely chopped premium white chocolate (such as Lindt or Ghirardelli) to 1 cup Chai Tea Mix. Stir well. Follow serving directions above with 2 heaping Tbsp. per cup of hot milk or boiling water.
